Ingredients
- 2 medium zucchini
- 1 to 2 tablespoons butter
- 1/2 teaspoon DabCat Ranch Garlic Salt
- 1/4 teaspoon black pepper, optional
Directions
-
Preheat oven to 400°F.
-
Wash the zucchini and split in half lengthwise.
-
Use a fork to poke holes down the entire cut side.
-
Spread a thin layer of butter on each cut side. Substitute olive oil, tallow, etc.
-
Sprinkle with DabCat Ranch Garlic Salt and black pepper, if using.
-
Spread the zucchini in a single layer on a baking sheet, cut side up. Give the pieces a little room so they roast instead of steam.
-
Bake for 15 to 20 minutes, until the zucchini is fork tender.
-
Once the zucchini is tender, switch the the broiler for 1 to 2 minutes and finish by browning the top.
Ranch Tip
Zucchini contains a lot of water, so don't crowd the pan. A hot oven and a single layer help give you browned edges instead of soft, watery zucchini.
